Homemade granola!

I found this recipe on one of the blogs I follow. First of all didn't realize how easy it was to make, and second I tweaked the recipe it to suit our family, since we are a bit more health conscious.

I wanted to share it with you, it's so delicious and simple to make.

Dry ingredients:

  • 3 cups rolled oats
  • 1/4 cup chia seeds (buy health food section supermarket or health food shop)
  • 2 cup walnuts
  • 1 cup currants
  • 1 cup dices dried apricots ( you can add whatever fruit you prefer- I have used goji berries before too. Great super food)
  • 1/2 tsp sea salt

In a mixing bowl add oats, chia seeds, walnuts, sea salt, mix well.

- Note don't add fruit until after you have baked in oven.

In a small pot combine:

  • 1/2 cup coconut oil
  • 1/2 cup rice malt syrup

Heat coconut oil until melted

Add to dry ingredients mix and spread on to trays lined with baking paper.

Bake in a 230 degree oven for 15-20min
Until golden brown
(Every oven different so just check on it, or
remove just before done it will keep cooking an dry out)

Once cool add your fruit- voila!

Store in a glass airtight container and you have your self some delicious homemade granola!

Enjoy!

A xx
